Hatsushibori Junmai Daiginjo Namagensyu
Let me explain about Hatsushibari first.
The brewery year is a sake production calendar year which is from 1st July to next year on 30th June. Sake rice harvest starts in September and the brewing season starts in October. Hatsushibori is the very first batch of sake produced using the recently harvested rice, which is very special in Sake culture. The release date of the sake is decided by the breweries.
The Hatsushibori 'KINOENE Twilight' is Junmai Daiginjo Nama Gensyu. Nama zake means Unpasteurised, and Gensyu means undiluted sake that has a very fresh, clear and rich taste, with an outstanding punch of flavour! Nama zake uses ‘Fusakogane’ rice which is a local rice in Chiba prefecture, and it brings a rich aroma, and is well balance with a subtle sweetness and a nice acidity.
This Kinoene Sake is bottled from the top of the Sake tank just before sunrise, and the label shows this idea in its lovely colours.
