This sake employs a unique process called 'Binhiire' (瓶火入れ), which translates to 'in-bottle pasteurisation'. While sake is typically pasteurised twice—once after brewing and again before shipping—Kinoene Hanayaka undergoes pasteurisation only once, after bottling. This method preserves a fresher taste and fruitier aroma, resulting in a more vibrant flavour profile.
The single pasteurisation process allows Kinoene Hanayaka to retain more of its delicate flavours and aromatic compounds, offering a sake that's both refined and lively on the palate.
